I'm sorry about your experiences with Sacred Mists during its first months. That was before my time there, but yours isn't the first serious complaint I've heard about the transition period.
I took all the lessons for the first two degrees at Sacred Mists - and Lorien told me the third degree just consisted of her thinking up stuff for me without any formal plan (so far as I could tell, I would have become as much conscripted secretary as seeker after mysteries). My research from the time indicates that more than 97% of the lessons had actually been taken from other websites where they were available for free. The Sacred Mists staff apparently just slapped some titles, very short sections of instructions, and a disclaimer about maintaining secrecy onto them before assigning them as their exclusive lessons. So you should be able to access the information without paying - as well as a lot of other great stuff available for free on the internet.
I can't say anything about the herbalism course specifically, but there's at least a good chance that that material is just free stuff compiled at SM, too. And the SM lessons tended (when I was there, anyway) to be on the light side, so you'll probably find a better level of challenge elsewhere, too.

I believe your complaint was made with the assumption that the environment is ours to use as we will and that a little extra exploitation is ok. You say that the amount of energy in question would only run a light bulb for five minutes. But you don't seem to realize that this is more than one recharge for one person we're talking about. We're talking about the amount of coal required for five minutes of light bulb energy - times the number of people who use this product, times the number of times each product is used. Even if only a few thousand Magic Mouses were sold, that creates a significant impact - especially as you have to recharge the batteries twice a month or more (for those who can get these products to work at all). I'm not just complaining about my problems here; I'm complaining that Apple is fostering a general anti-environmental attitude.
Nevertheless, I thank you for your comment. I think it highlights the pressing nature of environmental concerns that are so often overlooked.

You appear not to understand that the amount of energy required to charge those batteries wouldn't keep a light bulb lit for 5 minutes. Your environmental claim is absurd and that is why they don't feel obliged to address it.
