It sounds like they were afraid of cracking your oil pan and they aren't equipped to repair the car if that happens. They opted not to chance it, because they knew the potential for expensive damage and they aren't a proper repair facility that would have immediate access to repair parts. Oil pans are not something that parts suppliers normally stock, and it would have caused you a real headache.

I am sure that the manager may have a plan with his friend, and you should alert Wal-Mart about it. But if your Son-in-law, said that he could change the oil. Then why not let him do it costing you only the price of the oil? If you trust his judgement about how he could change it, then why pay another company to do it instead of asking him to do it? I'm just curious.
