Brocka Nolen, owner/operator of Desserts for Health in Dallas, Texas, provided my wedding cakes. A little more than half of the large cake was dry and had a bad taste. Ms. Nolen also used fabric ribbon and plastic red dots when my understanding had been that all the decorations would be edible. Finally, she used straight pins, the kind intended for sewing, to secure the ribbon to the cake, a safety hazard that could have been harmful to my guests. I actually bit down on one of these pins myself, causing alarm and some discomfort, but thankfully no injury.

I emailed with Ms. Nolen for the better part of three months, asking for a partial (50%) refund. While Ms. Nolen made statements in her emails that seemed to imply she agreed I was due a refund, such as "Due to other monetary circumstances and emergencies unrelated to you, it is not feasible to refund anything at the moment. Sorry, but if its not there, it cant be sent," she would at the same time refuse to send the refund.

Ms. Nolen even went so far as to state, "You knew in the beginning I was an independent operator, not a large establishment. If you were reluctant you should have gone to a store front bakery," which seemed to say I should have known she would not do a good job in the first place so this was somehow my fault.

I still plan to pursue this matter in whatever way I can, including reporting her to any and all agencies that either she is affiliated with in some way, or that oversee this type of business. This includes the local health department.

I would encourage your readers to avoid Brocka Nolen, Desserts for Health. She is an unethical person.

Of course I find this personally upsetting, both to my business and to the level of devastation that she herself experienced. Ive been in business over two years and this is the first complaint; and so extreme. Is it obvious too, this could be a case of "Bridezilla"? Upon first introductions, I sensed some contempuousness in her disposition. Our corresponding emails prior to "the day" even seemed full of disdain towards my service. There were a few instances where I personally wanted to just say, "never mind, please find someone else." But because I was offering a niche vegan cake, I wanted to follow-through, considering her chances of finding other options of similarity were slim. The whole energy of the process seemed to foreshadow this current result. I had done 7 wedding cakes prior to her's and used unedible decorations for 5 of them. There was never a problem or dispute that it was inappropriate in the past; i have always had praise and admiration. Even when couples have moved out of state for jobs, theyve begged me to ship them product! Eitherway, I was more than communicative, along with visual pictures of similar designs/sketches/chosen colors illustrating this fact, which I mailed her! When i set up the cake on site, I enthusiastically articulated to the cake server that pins were holding down some of the ribbons to the boards. The actual cakes sit on boards; it is impossible that a pin would even decoratively seal the ribbon if it were affixed into a cake; they were pierced into cardboard. I can not refute whether or not she bit into anything inedible. I was not there. But I was not manipulative or uncommuincative of my services. I can not refund the time invested nor the energy it takes to produce a cake of that size. I never implied that I would. I believe in her level of upset, she wanted to add "insult to injury" by claiming any of it was dry! I might be making a niche product (vegan, gluten free or diabetic-friendly) that the mainstream assumes could be too "healthy" or tasteless, but like I stated earlier, Ive been in business over two years and baking for many more than that, and this is the first and only complaint or of this magnitude.
