What you describe here is not that unusual at car dealerships. They will take full advantage of people who are in the habit of signing things without reading them. The lesson you should take away is : Do not sign anything until you have read and understood it. If you read it and still don't understand it, take it to someone who will explain it to you.
What it comes down to is that it doesn't matter what a salesperson says you are signing, what matters is what the document says. If it's important enough to require your signature, it's important enough to read and understand.
