Send a certified, return receipt requested letter to them request payment. If you know the name of the owner of the business, address the letter to the owner. Explain in detail how you conclude that they still owe you one week's wages and inform them that if they do NOT AGREE that they owe you, you would like a detailed written pay history that establishes that you are not owed any further compensation.
