Gift card for $500? WOW, gift cards work instantly after being paid for. Maybe you should tell the ***Truth*** And you shouldn't call people that you have never met sleazy...even in your fantasy story.

First off, gift cards are best bought in the store in my opinion. Second, I am pretty sure that corporate policy doesn't include "stealing" your personal information to "sell it" or anything else. You're paranoid. Rightly so, I suppose. Anyway, you should've had the order invoice when you bought it, and printed it for your records (like it says to do). If you somehow didn't get the email the order number would've likely sufficed. Next, I thought it was common sense to black out all but the last 4 digits of your CC, along with your address, etc when providing such proof of purchase (This is not an uncommon method for online retailers). Sorry you had problems, but I can say that very likely gamestop doesn't have a conspiracy to sell their customers personal information.
