There are two separate and maybe three matters here.
You signed a contract to make payments on or before the due date...PERIOD. You failed to do that which means YOU turned on the collections, repo and court activities. None of the other matters has any bearing in this. The payments are due when they are due. Suing for the remainder of the contract is commonplace.
The fact that they sold you what appears to be junk has zero bearing on the above.
The fact that they have poor customer service and/or do not appear to be doing much business has zero bearing on the above.
Apparently your fiancee has bad credit otherwise he wouldn't be using a subprime dealer. Subprime dealers usually sell old, worn out, poor quality cars. Perhaps you should be encouraging him to improve his credit reputation.
Since he had bad credit before this and is now involved in still another bad credit situation...a repo...perhaps you should be doing some serious thinking as to whether this guy has the maturity and financial responsibility to be a real husband!
